How do i find out how Nathan Cropper learned to write, he was a shopkeeper in 1841 and farmer before 1851, he could sign his name in 1831 when he married. Question

I doubt you can. At that time there was no formal education unless you paid. Maybe a friend, family member or neighbour taught him - maybe only to sign his name.

The first school in North Meols:

"1725 North Meales : here lately built by ye 2 Lords of this Manour, Bold and Hesketh, a very handsome school near ye Church, there being left to ye use of a school by ye late Rector"

However I suspect that it was only the sons of 'gentle folk' who were educated there initially?

There was a school prior to this.  There is a record of the baptism of the daughter of the schoolmaster in 1660 so it already existed by then.  In 1684 is the first recorded bequest to the school (in the Will of the Rector, James Starkie - he left £40 to the North Meols Grammar School).  He was followed in 1690 by Thomas Blevin who left £20 with the instructions that it be used to instruct poor children in the scriptures.  He also specified that he wanted to see a school in Crossens or Banks.  By the 18th century there is mention in the Parish Registers of a schoolmistress at Banks and another at Birkdale and Peter Aughton is of the opinion that they ran "Dame" schools for the very young children befor entry to the Grammar School at the age of 7.
