Lost 'Rimmer' family in 1861

I seem to have lost my 'Rimmer' family in 1861.

The documents I have so far are:

Birth certificate for Margaret Rimmer b 14/11/1849 Altcar.
Marriage certificate Margaret to John Bond 3/7/1871 Church of St Nicholas , Liverpool. Both resident in Hopwood at time of marriage.

Thomas Rimmer (c1801) & Esther Cadigan (c1808) are Margarets parents.(married 9/5/1832 - Formby)

So far I have found:

1871 census: Resident Hogs Hill, Altcar
Esther Rimmer 63 - b 1808 formby - widow
Margaret 21 - b 1850 - Altcar
Annie 17 - b 1864 Altcar

1851 census: Resident Little Altcar
Thomas 50 b 1800 Formby - Ag Lab
Easter 42 - wife
Elizabeth 18 - daug - b Formby
Alice 10 -daug - b Altcar
Jane 8 - daug - b Altcar
James 6 - son - b Altcar
Margaret 1 - daug - b Altcar
Mary 1 - grd daug - Altcar

In 1841: Resident Altcar (the dates are a little out of sinq):
Thomas 35 - Ag Lab
Easter 30
Elizabeth 8
Alice 2
James 6
In addition a family by the name of Howard.

1861 - I can't find the family. :?:

If anyone can point me in the right direction, or has any suggestions... they would be very much appreciated.
It is quite possible that I have missed something, although I have tried to account for variations in spelling etc.

I'm relatively new to this, so there is a possiblity that I have made a faux pas somewhere down the line

If I have, please put me straight!

We have a Thomas Rimmer baptised at St Peters Church Formby 11 Jan 1801
He was the son of William and Elizabeth Rimmer who were married at St.Peters Church 16 June 1798
My husband is descended from John Rimmer (brother of Thomas) baptised 22 July 1804

Our Howard line includes James Howard born in Altcar who married Ann Norris. Their daughter Fanny married Thomas Swift in 1863

Still can't find any of them in 1861 though..... very strange.

Did people holiday abroad then?

If anyone can find them I'd be very grateful, as I'm going around in ever decreasing circles.... & ever so slightly mad

John Rimmer b.1804 (bro to Thomas) was a farmer of 6 acres in 1861.
No address given, but was listed between The Parsonage and The Formby Arms
